5. VANILLA BEAN COCONUT FLOUR CUPCAKES

Cup cakes! Doesn’t it take you back to your childhood? I remember standing in my Gran’s tiny kitchen making these, not low carb ones mind, this was in an age where we could still eat some sugary stuff without becoming diabetic or fat…boy, how things have changed.

I really love the look of these low carb cupcakes, only 10g of carbohydrate per cake, and a nice sprinkling of fibre (yes, that is the correct spelling) 🙂

8. LOW CARB CROCK POT RICE PUDDING

Rice pudding. I still eat the ‘real’ stuff on occasions, it’s another trip down memory lane for me. My Mum used to make it a lot, baked in the oven. I LOVED the skin and the scabby bits around the edge of the pyrex dish, almost preferred it to the actual ricey bit. This low carb version uses Miracle Rice.

9. CREAMY MILK CHOCOLATE PUDDING

This low carb chocolate pudding looks awesome. I bet your high carb family and friends would not even notice the difference.

Another Chia pudding! I love strawberries, one of the most wonderful fruits. I grow them, and the squirrels steal them. We blamed to dog for ages until I caught the ‘tree rat’ in the act…true story.

Anyway, this low carb pud looks divine.
